This is what we found when we went beyond the obvious on a recent food service fridge repair — and why it matters for food safety, energy costs, and how long your equipment lasts.
The Job — More Than Just a Fan Motor Replacement
This food service fridge came in for what looked like a straightforward repair. Two fan motors needed replacing. We confirmed the fault and started the repair.
But replacing only what is immediately visible is not a thorough service.
As part of every visit, we inspect the areas that staff and even some other service providers never look at. The internal spaces behind the refrigeration components. The underside of the cabinet. The areas around the condenser and evaporator assemblies.
On this fridge, what we found in those areas was significant.
What We Found — Heavy Buildup in the Areas Nobody Sees
Behind and beneath the refrigeration components, there was a thick accumulation of dust, dirt, and organic debris.
Thick enough to restrict airflow. Thick enough to affect how the components were performing. And thick enough to be a genuine food safety concern in a commercial food service environment.

The surfaces that get cleaned regularly in a commercial kitchen — the shelving, door seals, and cabinet walls — are the ones staff can see and access. These are important. But they are not where the most serious contamination builds up.

Debris in the airflow path of an evaporator fan can be circulated through the cabinet interior. Replacing the fan motors fixed the fault that was reported. Cleaning the internal spaces fixed the underlying condition that was affecting the whole system.
