Stepping into a butcher shop cool room always takes me back. The smell, the sight of perfectly aged beef, the hanging pork—nostalgia hits hard. Growing up in my dad’s butcher shop, I didn’t inherit the love of cutting meat—but I did inherit something else: a passion for refrigeration.

This week, we were back in one of those familiar cool rooms, and it reminded me exactly why we do what we do.

The problem? Two old evaporator fan cages—rusty, brittle, and caked with dust. They still blow cold, but they’re far from food-safe. The plastic coating has peeled away, corrosion has set in, and now the health department has flagged it. Fair call too—because in this industry, appearances matter just as much as performance.

Now here’s the kicker: you can’t just replace the cage. You’ve got to swap out the entire motor unit. It’s a small fix with a not-so-small price tag—especially for a premium butcher shop. But when it comes to food safety and compliance, it’s non-negotiable.
