Food Service Display Unit Failing at 5°C — Compressor Valve Failure Diagnosed and System Replaced

When a food service display unit cannot hold the temperature required for food safety compliance, the consequences are immediate: stock at risk, regulatory exposure, and no margin for delay.


The fault: a display unit that could no longer hold the legal temperature threshold

We attended a food service display unit that had been struggling to maintain temperature below 5°C — the threshold above which chilled food in a commercial food service environment cannot legally be stored or displayed.

The cause was identified on inspection: the compressor valves had worn to the point where the unit was unable to maintain adequate pressure differential across the refrigeration cycle. Worn compressor valves are a progressive fault, the unit continues to operate, the compressor continues to run, but the efficiency of the compression drops as the valves lose their sealing ability. The result is a system that cannot achieve the operating temperatures its refrigerant charge and specifications should deliver.

This is a fault that is easy to miss until the consequence, a display unit that cannot hold the correct temperature — forces the issue. By the time the temperature failure was identified on this unit, the valves were too far gone to justify a repair. The right decision was replacement.

Why compressor valve failure is not always obvious

Compressor valve failure in a food service display unit does not typically announce itself with a complete stop. The compressor continues to run. The display cabinet continues to operate. The temperatures may be slightly elevated but within a range that is easy to attribute to ambient conditions, door openings, or heavy loading.

The gradual nature of valve wear is what makes it dangerous in a food service context. A display unit running at 6°C or 7°C is not meeting food safety requirements, but it may not trigger an obvious alarm if the monitoring is casual and the deterioration has been slow. The problem is present before it is diagnosed.

Signs that can indicate compressor valve wear before the fault reaches a critical point include:

  • A compressor that runs for longer periods than normal to maintain temperature
  • Temperatures that have been gradually climbing over weeks without an obvious cause
  • Difficulty holding temperature during peak trading hours or in warmer ambient conditions
  • A compressor that is running hotter than expected given the ambient temperature

None of these individually confirms valve wear, but each is a reason to have the system assessed before the temperature climbs above the food safety threshold.

The replacement: a properly sized system, correctly installed

Given the extent of the valve wear, replacement was the appropriate course of action. Compressor valve replacement on a food service display unit is possible on some units, but the cost of the work combined with the age of the unit and the likelihood of other components reaching end of life, made a full unit replacement the more practical and cost-effective outcome for this client.

The replacement unit was specified at a slightly larger capacity than the original. This provides a performance margin that accommodates peak load conditions: busy service periods, higher ambient temperatures, or frequent door openings — without the system having to operate at the edge of its capacity to maintain the required temperature.

The installation process:

  • The original unit was removed and the refrigerant recovered using certified recovery equipment
  • The replacement unit was positioned and the refrigerant circuit re-piped to the new configuration
  • Electrical connections were rewired to the replacement unit
  • The system was evacuated to 500 microns to remove all air and moisture from the refrigerant circuit before charging
  • The system was charged with the correct refrigerant to the manufacturer’s specification

From startup, the unit reached and stabilised at 5°C within minutes, confirming that the replacement system was correctly specified and installed, and that the food service display was compliant from the first run.

What the 500 micron evacuation standard means

The system was evacuated to 500 microns before charging. This is worth noting because the evacuation step is one where shortcuts are sometimes taken, and the consequences of inadequate evacuation are not immediately visible but are significant over the long term.

Evacuation removes air and moisture from the refrigerant circuit. Air in the system raises operating pressures and reduces efficiency. Moisture causes acid formation within the refrigerant circuit, which attacks compressor internals, valve seats, and filter components. A system charged without adequate evacuation will perform acceptably initially but will degrade faster than a properly evacuated system.

500 microns is the appropriate standard for commercial refrigeration work. It is achieved with a quality vacuum pump held for sufficient time, and it is confirmed with a vacuum gauge before charging begins. This is not an area where approximations are acceptable.

The outcome: compliant, efficient, and correctly documented

The food service display unit is operating at the required temperature, correctly installed, and properly documented. For the operator, the replacement means:

  • Compliance with food safety temperature requirements from day one
  • A correctly sized system with capacity margin for peak trading conditions
  • A system that has been evacuated and installed to the correct standard
  • Service documentation recording the refrigerant type and quantity, installation date, and commissioning results

For food service operators, documented refrigerant records are also a legal requirement under the Ozone Protection and Synthetic Greenhouse Gas Management Act. Correct documentation from the point of installation ensures that future servicing has accurate baseline information and that the operator is not exposed to compliance gaps in their service records.
